Gluten free brownie brittle

I’ve made this recipe a number of times and plan to make a few batches for paxaus

Last time, I veganised it by using ground flax seeds + water + leaving it sit 15 minutes to make ‘eggs’ and most of it worked well, although some bits were a bit crumbly (I might buy ground flax this time instead of mortar+pestling it if I’m going to make a bulk batch).

Prep time says 5 min, isn’t far wrong. Chuck dry ingredients (except toppings) in a bowl, stir, add wet ingredients, spread into rimmed baking tray, sprinkle toppings, bake 16-20 minutes at 350, slice before it cools.

[ul][li]1/2 cup plus 1 tablespoon (2 1/4 ounces) white rice flour[/li]
[li]1/2 cup (3.5 ounces) granulated sugar[/li]
[li]2 tablespoons cocoa powder[/li]
[li]1/4 teaspoon baking soda[/li]
[li]1/4 teaspoon table salt[/li]
[li]2 large eggs (or 2 tbsp ground flax or ground chia + 6 tablespoons of water)[/li]
[li]2 tablespoons vegetable oil[/li]
[li]1 teaspoon vanilla extract[/li]
[li]1/2 cup toppings, such as chocolate chips, chopped nuts, toffee pieces, and/or other candy[/li]
