I’ve been making these for a while now. They always end up too soft and without enough structure. This time I reduced the butter by 1/4 cup (basically substituting sriracha for butter, like applesauce cookies). I also went straight to 3 cups of flour since I knew these tended to be softer.
Initial results are good and I think this will be a much more sturdy and appealing cookie.
