Recipe: Angemaler's Mounds Truffles

These truffles/candies are part of my family’s Christmas Cookie list, and here is the recipe per request:

In a large bowl, mix by hand the following ingredients until well combined, forming a dough that allows you to ball it together (if it is humid out, you may find that you need more sugar and coconut to help make the dough not so sticky that it won’t come off your hands):

1 pound of coconut
1 pound of powdered sugar (about 4 cups)
1 can of sweetened condensed milk
3 cups crushed walnuts

Form into balls of your size preference (usually 1" is decent size).

In a double boiler, melt the following:
12 oz package of semi-sweet chocolate chips
1/3 stick of parafin wax

I usually melt the wax then add the chips, and I prefer the melted concoction to be smooth and free of the “glop” effect when poured.

Prepare wax or parchment paper surfaces, and then dip the balls in chocolate (I use two long-handled spoons to dip them) and place on the paper to cool (place in the fridge for faster cooling and hardening). When dry, store in a cool place.

This recipe makes a ton of them…I’ve never actually counted but probably close to 100.
