*Chocolate Chip Cookies*
2 cups light brown sugar
1 cup shortening
2 large eggs
1 tsp vanilla
1 1/4 tsp baking soda dissolved in
3 tbsp cold water
3 cups flour
1/4 tsp salt
1 tsp baking powder
2 cups chocolate chips
Cream sugar, shortening, eggs and vanilla until fluffy. Add in soda and
water. Blend in sifted dry ingredients; add chocolate chips. Drop by
teaspoon onto baking sheet. Bake at 350°F for 8 minutes. Cool on pan for 3
minutes, then transfer to cooling rack.
*Recipe History*
My mom is the middle of 11 siblings. In the middle of the 1980's, my mom
collected recipes from her mom and her siblings (and their spouses) and put
together a family cookbook. This recipe was in there and quickly became my
family's favorite chocolate chip cookie. In 2003 one of my cousins revised
the family cookbook with lots of recipes added in from the kids in my
generation. This recipe is still in there and is still my favorite now that
I have 2 kids of my own. These cookies are also great for taking to PAX
because they freeze and thaw excellently, allowing me to make lots of them
ahead of time.
