*Oatmeal Chocolate Chip cookies*
INGREDIENTS
1 cup shortening
3/4 cup packed brown sugar
3/4 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups rolled oats
2 cups semisweet chocolate chips
1 teaspoon vanilla extract
1 teaspoon cinnamon
DIRECTIONS
In a large bowl cream shortening, brown sugar and granulated sugar.
Add eggs & vanilla and mix thoroughly.
Combine the baking soda, salt, cinnamon and flour and stir into
creamed mixture.
Add oatmeal and chocolate chips and stir until well blended.
Refrigerate the dough for an hour or more.
Heat oven to 330 degrees F.
Drop by 1 1/2 tablespoon-fulls onto cookie sheet. (Medium size cookie
dough scoop.)
Bake for 15 minutes.
HISTORY/FACTOIDS
This is the same recipe I've been using since the first Cookie Brigade
in 2008.
Over 2,000 of these cookies have been baked for Cookie Brigade to
raise money for Child's Play.
In 2008, after the very first batch, the thick batter destroyed my arm
and I had to break down and buy a stand mixer. It's only ever used for
