Oatmeal Chocolate Cookies (vegan)
Adapted from Vegan Cookies Invade Your Cookie Jar
Yields 2.5 dozen
2 c quick oats
1 2/3 c all purpose flour
2/3 c cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 1/4 c sugar
2/3 c canola oil
2/3 c almond, rice, or soy milk
1 1/2 tsp almond extract
1/2 tsp vanilla extract
1 c vegan chocolate chips or carob chips
3/4 c dried cherries (optional)
3/4 c nuts (optional)
Preheat oven to 350 degrees.
In a medium bowl, stir together the dry mixture of oats, flour, cocoa
powder, baking soda, baking powder, and salt. Set aside.
In a large bowl, beat together the wet mixture of sugar, milk, oil and
extracts.
Add dry mixture to wet mixture one cup at a time, mixing well.
Stir in chocolate chips, cherries, and nuts.
Drop dough by generous rounded tablespoonfuls 2 inches apart onto
parchment lined cookie sheet. Flatten slightly with a greased spoon.
Bake for 10-12 min. Let cool on sheet for 2-3 minutes or until set,
then transfer to wire rack.
